$4.50-$5.50/lb. Approximate size: Soup Shanks 1 lb. Short Ribs 2-3 lbs. Soup shanks, cross-cut shanks, or shin beef are excellent for soups. You get the benefits of bone, marrow and beef in one piece. Short-ribs are delicious, but require a long cooking time.
